The Holley-Navarre Water System board of directors on Tuesday approved a lease for Black Skimmer Grille to operate at The Club at Hidden Creek. The new restaurant is expected to open by mid-May.
“Our goal is to make this place Navarre’s version of Cheers with good burgers and bar food,” said Andrew Suthers, a graduate of Le Cordon Bleu who recently relocated from Kentucky along with his business partner and fellow chef, Kara Mardell. “Our burger game is insane,” he said.
A sneak peek of the menu, which is still under development, shows the eatery will feature a variety of burgers, sandwiches, salads and snacks, including Buffalo wings and crispy Thai-style calamari and baked or raw oysters.
“We are very passionate about our food. There will not be a frozen piece of seafood, and we will have hand-cut fries,” he said.
Per Suthers, weekly entrée specials will be featured on the menu, which he describes as chef driven and locally sourced.
Black Skimmer Grille will be open seven days a week. Suthers said the restaurant will likely open at 11 a.m. daily and stay open with a full kitchen until 8 p.m. on weekdays and 10 p.m. on weekends. He also said there will be a “killer brunch” each Sunday from 10 a.m. until 3 p.m.
Additionally, catering will be available. “We want to do smaller catering than what the club did before,” noting that previously the restaurant was closed for events. “We want to limit the catering to the dining room and the patio.”
Plans are also underway to add three large-screen televisions in the dining room and dart boards in the adjacent area.
“We’re not just a golf club,” Suthers stressed. “We want to take care of the members of course but also everybody in Navarre.”
